This adult only 110-year-old Italian mansion in historic Victoria is adjacent to the Government House and Gardens. It features a daily homemade breakfast and luxury rooms with a 2-person jetted tub. The elegant rooms at Fairholme Manor are styled with hardwood floors and clean white walls. Each room features a TV and VCR, small refrigerator and bathrobes. Many boast 12-foot ceilings or large bay windows. Guests can enjoy a deluxe breakfast including homemade jams, fresh baked scones and fresh fruit, in the bright dining room or on the porch. Fairholme Manor Inn uses its own homegrown vegetables along with produce from local farms. Sylvia and her husband opened Fairholme Manor Inn in Victoria's Rockland area in 1999. Sylvia has published 2 cookbooks by Whitecap books. Sylvia's debut book , Fabulous Fairholme: Breakfast & Brunches is a Canadian Bestseller and her second book Easy Elegance from Fabulous Fairholme : Breakfast, Brunch, Lunch features her cousin, celebrated chef Nora Pouillon of Restaurant Nora in Washington DC. In the kitchen, Sylvia likes to prepare food with seasonal, fresh and local ingredients, as she believes quality ingredients are key to fabulous results.
